Chicken and Rice
3 Boneless skinless chicken breasts cut into chunks
1 stick of butter
1 medium onion
2 stalks of celery
1 cup baby carrot halves
2 Tsp salt
2 Tsp pepper
1 Large Container * box* of Chicken broth
1 cup of uncooked rice
Melt butter in a large sauce pan. Add onion, celery, and carrots. Cook for about 3 minutes.Add chicken and stir. Put in entire box of Chicken broth and stir well. Let simmer for about 15 minutes. Add rice, stir, and place lid on pan. Cook on low for about 20 minutes. Remove lid, stir and cook on low until most of the broth is absorbed by the rice.
This is excellent served with Ritz crackers, or fresh baked bread. A meal within itself, but you can also add a side salad.
