Skinny Minny Mommy's Guiltless Turkey Chili
(aka "Rainbow chili" because of the different colored veggies)
I am in LOVE with flavors. Especially ones that are warm and comforting. Trying to up my veggie intake is a bit harder then I thought. So, what better way to add some nice and good antioxidents along with some warm goodness? CHILI of course! My family is going to be feasting on one of their favorite comfort meals (per dh's request) of Chicken and Dumplings. I have yet to try to make that out of anything but white all purpose flour, so for now they get theirs, but oh my ~ I get mine too! (And for several meals throughout the week!) (I had considered adding some squash but I am not fond of mush veggies. Any suggestions?)
1 tbs olive oil
2 stalks of celery chopped
1/2 of a purple onion
1/3 yellow bell pepper chopped
1/3 red bell pepper chopped
1/3 orange bell pepper chopped
2 whole green fresh jalapenoes
2 lbs ground turkey
salt, pepper, garlic powder to taste
2 cans of Rotel (diced tomatoes & green chilis)
2 packets of Chili seasoning (McCormick)
1 can Kidney beans
Saute veggies in olive oil. Add turkey and brown meat, stirring often to make sure it is all cooked well together. Add the cans of tomatoes and chilis, beans, and packets of chili seasoning. Mix well. Place in crockput and cook on high for 3 to 4 hours or low for 6 to 8. Serve with a dollop of nonfat plain yogurt (Iif you usually use sour cream) and cheddar cheese. If you like more spice (my peppers don't seem like they were spicy enough) you can add some crushed red pepper ( like the kind you put on pizza) when serving. YUMMY!

Going leaner in my food choices ironically is not limitting me, but opening a whole new world to me.
