It is no hidden theory that I LOVE mexican food. I seriously could eat the stuff every day, and would not tire of it's spicy flavors. In my quest to find a healthy balance for our entire family, I decided I would be spending more time figuring out recipes that we LOVE, but lightening them up a bit. This is a fantastic recipe! I LOVE TACO Soup, and I realize that I do it a bit different then alot. That is okay.
1 lb ground turkey
1 can Red Kidney Beans
1 can corn
1 can Rotel tomoatoes & chilis
1 packet of Taco seasoning
Brown ground turkey, add in remaining ingredients and stir. Allow to simmer on low for a few hours or if you are in a rush, go ahead and kick up the heat, but at least give it 30 minutes for the flavors to meld. (This can also be put into the crockpot and simmer on low for 8 hours/ high 4hours)
I am implementing the use of ground turkey for things that we usually have "sauced" like tacos, sloppyjoes, etc., because it gives the same texture as beef and with the seasonings and such you don't realize it isn't beef. For my husband who really needs to lose a good 30 to 40 pounds, I am hoping these small changes will help.And for me, I KNOW they will help! I am craving those lighter meals, so yay me!
