Apricot Glazed Pork Tenderloin: Crock pot recipe

Apricot Glazed Pork Tenderloin

2 small Pork Tenderloins (or 2 1/3 pounds of pork tenderloin)
1 Medium yellow onion sliced into rings
Salt
Pepper
Garlic Salt
3 TBS Soy sauce
3 large tablespoons of Apricot Perserves
3 large tablespoons of Brown Sugar

In a large oval crockpot place sliced onions on bottom. Salt and pepper to season onions. Sprinkle both sides of the tenderloin with Garlic salt and pepper. Place on top of onions in crockpot. In a microwave heat up apricot perserves for about 35 seconds. Stir well. Add in brown sugar then drizzle on top of tenderloin. Sprinkle Soy sauce over top of pork. Cook on low for 8 hours.

About 30 minutes before you are ready to serve dinner, remove pork from crockpot. Allow to rest on a plate or cutting board for about 10 minutes.Slice pork into medalions. Place softened onions beside pork. Drain liguid from the crockpot into a sauce pot and simmer until it thickens slightly. This is fantastic to drizzle over the meat and whatever side you serve with this. (I served it with rice, and steamed California mix veggies). When plating, I suggest about 2 to 3 medalions (these are small peices) per plate, with the a few of the onions on top. Drizzle a bit of the juice on top of meat and onions. This is a sweet/salty combination that hits many spots on the tastebuds!
