This was a kid friendly meal, as what kid doesn't like something made with "Doritos"?
6 Boneless skinless chicken thighs
Garlic Salt and Pepper to taste
water (see directions)
1 small can chopped green chilies
1 Can Campbell's reduced fat cream of chicken soup
1 Can Campbell's Fiesta Cheese soup
1 bag of Doritos (NOT the family size but the size under)
2 cups of Mexican Blend Shredded Cheese
In a pot, put the chicken thighs with enough garlic salt and pepper to your tasting. Cover with water. (When you are done you will also have a batch of homemade chicken broth to use in a recipe later in the week!) Boil the thighs until cooked through ~ I simply put them on and let them go for about 30 minutes or so. There are NO bones, but I wanted my water to be seasoned well to use for Creamy Chicken and Noodles later in the week. Remove thighs from broth and allow to cool.
In a large bowl, break (shred) the chicken. Dump in the can of chilies, cream of chicken soup, and the fiesta cheese soup. Next grab the bag of Doritos and open it, then crush them babies up! Dump the entire bag of crushed Doritos into chicken and soups. Mix together well. Spray a 13x 9 pan with Pam, and then Dump the chicken/chip mixture in. Spread out into pan evenly. Top with the 2 cups of cheese. Bake in 375* oven for about 30 minutes to get everything blended and cooked together, as well as the cheese nice and bubbly.
I served this warmed tortillas and Spanish rice. I wished I had added some nice homemade re fried beans, but well, it was Monday and I had just had a "marathon" of a day tending to the needs of my life. This particular recipe the way I made it this time, I will definitely add it to our regular menu!
**NOTE: This is not a "spicy" dish, as the green chilies are very mild. I like spicy food, but this was still very tasty! Top with a dab of sour cream, Hot Sauce, shredded lettuce and tomatoes to add a bit more yumminess!
