Turkey Chili

I am in LOVE with flavors. Especially ones that are warm and comforting. Trying to up my veggie intake is a bit harder then I thought. So, what better way to add some nice and good antioxidents along with some warm goodness? CHILI of course!
1 tbs olive oil
2 stalks of celery chopped
1/2 of a purple onion
1/3 yellow bell pepper chopped
1/3 red bell pepper chopped
1/3 orange bell pepper chopped
2 whole green fresh jalapenoes
2 lbs ground turkey
salt, pepper, garlic powder to taste
2 cans of Rotel (diced tomatoes & green chilis)
2 packets of Chili seasoning (McCormick)
1 can Kidney beans

Saute veggies in olive oil. Add turkey and brown meat, stirring often to make sure it is all cooked well together. Add the cans of tomatoes and chilis, beans, and packets of chili seasoning. Mix well. Place in crockput and cook on high for 3 to 4 hours or low for 6 to 8. Serve with a dollop of nonfat plain yogurt (Iif you usually use sour cream) and cheddar cheese. If you like more spice (my peppers don't seem like they were spicy enough) you can add some crushed red pepper ( like the kind you put on pizza) when serving. YUMMY!
