Little did I know that this recipe would not only fall into a regular routine with our family. But any recipe that I cook, and brings kids into the kitchen saying "THAT smells delicious!" or "Yummy!When's dinner?", I know it has some promise! And when it's easy, easy clean up, and budget friendly, it's a winner with me! Our food budget is not on the low end, but I do try to cut corners and cook in a budget friendly way when I can.

3 Step Italian Chicken
1 family pack of raw boneless/skinless chicken tenderloins (mine was almost 2 lbs) (or your cut of choice)
1 small packet of dry Italian Dressing Mix
2 TBS white distilled vinegar
3 TBS oil (Olive or oil of your choice)
Garlic Salt and Pepper to taste
1 bag of shredded mozzerlla cheese
Two to three hours before your ready to start dinner, place your chicken in a large bowl or marinating container. Toss in all ingrients except the cheese. Cover well, and place in fridge to marinate and get happy. Preheat oven to 375*. Line a cookie sheet with foil. Spread chicken out in a single layer. Bake in oven for about 25 minutes, turning chicken 1/2 way through. Pull chicken out, and top with entire bag of shredded cheese. Place back in oven for about 8 minutes or until chicken is melted and bubbly.
This would be delicious served with pasta salad, garlic bread, and maybe some roasted veggies!
