In my home monday: Short menu & Taco Night recipe

As I begin this day, it is a day full of errands, getting things done, all while sitting around waiting! Love days like those! Do you know why? Often times, I get more accomplished then I ever intended. Mondays for so long have become one of my favorite days of the week.  Things get back in order, in line, and on schedule.


This week's menu is a bit straggly looking compared to last weeks. The kids are at their grandmas for an undetermined time and for at least a few nights it's just the husband and I. Meals can be small, enjoyable and different then the normal.

Sunday
B: Donuts
L/Dinner: Texas Road House
Dessert: Ice Cream

Monday
B: cereal and toast
L: out with mimi
Dinner: Biscuits and Sausage gravy
Tuesday
D: Teriaki Pinapple Chicken, Broccoli

Wednesday (4th of July)
D: Chili dogs

Thursday
D: Bacon Grilled Cheese

Friday
D:Pattymelts w/ carmelized onions & fries

Saturday
B:Eggs, Bacon, Toast
L:Corndogs
D: Family BBQ @ inlaws

Sunday
B: Cinnamon Breakfast Cake, Eggs
L: Ramen Noodles & Grilled Cheese
D: Chicken and Dumplings
Dessert: Death by Chocolate


Recipe adventure of the week:
This past Friday, after an afternoon at a friends swimming, I was really not into making anything time consuming nor brain storming for dinner. So I began pulling things out of the cabinet and I already had a pound of ground beef/vension mixture defrosted, so dinner was whipped together in a snap. I will definately make this again ~ and sadly I do not have a picture to share. The internet ate it.

Mother Hubbord Taco Night Casserole
1 lb ground meat (turkey, beef, vension, etc)
1 packet taco seasoning
1 can corn drained
1 can Rotel drained 1/2 way
1 can Campbell's cheddar cheese soup
1/2 a bag of large elbow macaroni
1/2 bag of Shredded cheddar cheese

Boil macaroni as to directions. In a pan brown the ground meat and then drain. Return meat to pan and add taco seasoning along with about 1/2 cup of water. Allow to simmer for a few minutes. Drain pasta. Pour pasta, taco meat, corn, rotel, cheddar cheese soup in a 13x9 pan and mix together well. Top with shredded cheese and bake in 375 * oven for about 20 minutes or until bubbly and cheese melted on top.
