Crack Potatoes

I have never done crack,... but let me tell you something! I tend to gravitate to experiment with things that have the word CRACK in the title! Of course I have to make things my own, and I don't like sharing just someone else's recipe when it has already been shared. So here is my version of a potato casserole that I like to call CRACK Potatoes which really are fabulous for dinner, but great the next day for lunch or breakfast too!


Ingredients
4 medium size potatoes washed and peeled
16 oz sour cream
2 cups shredded sharp cheddar cheese
1 Ranch Seasoning Packet
1 package Oscar Meyer Bacon Pieces (or about 8 slices of bacon cooked and crumbled)
Black Pepper to taste

Using a cheese grater, grate the four potatoes into shreds (Like hash brown shreds) into a large bowl. Dump the seasoning packet, cheese, sour cream and bacon on top. Mix well. Pour into a lasagna pan size casserole dish and spread out evenly. You can just put in a 13x9 dish but cooking time may vary. Bake in a 400* oven for about 25 to 30 minutes until it is golden brown on top.

It took a whole 5 minutes tops to shred the potatoes myself. Please take the time instead of relying on frozen hash browns. It makes the difference!
