Italian Sub Salad

This was one of those crazy busy weeks! I do apologize for posting less this week but things will slow down for a bit for a few weeks. Football in Texas is nothing to shy away from, even at the middle school level. Well, to be honest even at the PeeWee (Little League) level. With that said, I must tell you we will soon be heading straight into Basketball season which is a first for our family. We are not big Basketball fans, so we really do not watch any NBA games unless we are at a block party and it happens to be on. Where as football consumes at least five to six days of our week (between the middle school, varsity, college, and NFL).

Busy hectic schedules often calls for quick to make meals. As the wife and mother of our home, I don't want to rely on take out to feed our family so I try to find something that I can have made ahead, cook in a slow cooker, or ways to reinvent any leftovers.

Here is a tasty go to salad that everyone seemed to enjoy, and we even ate again the next day for both lunches and dinner. Needless to say it feeds a crowd.

1 Head Green Leaf Lettuce (or your choice lettuce) Chopped or Torn into bite size pieces
2 Large Tomatoes Chopped
1 Bag of Fresh Cauliflower/Broccoli florets cut into bite size pieces
2 Cucumbers peeled and cut into chunks
8 oz block of colby jack cheese cut into chunks
6 oz each of Salami, Bologna, Ham, Turkey, and pepperoni chopped into bite size peices
Italian Seasoning to taste (sprinkle at least a little )
Garlic Salt to taste (sprinkle at least a little)
1/4 cup grated Parmesan cheese

1. In a large bowl toss all the listed ingredients. Serve with Creamy Italian Dressing and hot crusty garlic bread.
